Orange Almond Crisps Recipe

 

The orange almond crisps recipe is light and crispy and goes great with coffee or ice cream!

Ingredients
1 cup shortening
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
2 tablespoons orange juice
1 tablespoon grated orange peel
1/2 teaspoon almond extract
2 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 cup chopped almonds

Hardware
Whisk
Large bowl
Medium bowl
Cookie sheets
Mixer

Step 1: Preheat oven to 375 degrees F.
Step 2: In a medium bowl, whisk together the flour and baking soda; set aside.
Step 3: In a large bowl, cream shortening and sugars together with an electric mixer set on medium-high.
Step 4: Beat in egg, orange juice, orange peel, and almond extract.
Step 5: Gradually beat flour mixture into creamed mixture.
Step 6: Stir in chopped almonds.
Step 7: Roll into 1-inch balls. Place 2 inches apart on ungreased cookie sheets.
Step 8: Bake for 8-10 minutes or until lightly browned. Transfer cookies immediately to a cooling surface.

Makes about 6 dozen cookies.
